The stock-api log reports that it cannot open its data file. Find out which config file and line cause this, and fix the value. You start in /srv/stock-api.

Start from the symptom:

grep ERROR logs/app.log

Then search the config directory for the path the error names, compare it with what is actually in data/, and edit the one wrong value with nano.

Check your fix with grep -n data_file config/app.conf. The other errors in the log come from different problems; leave them for the next labs.
